Libby’s Pineapple Pancake Recipe


2 Libby’s Sliced Pineapple, 15 ounce cans
1  Pancake Mix box
2  Large Eggs
6 Tablespoons Butter, plus a little extra for the griddle
2 Cups Milk
1 Electric Griddle
1 Electric Beater


  1. Set your electric griddle to 375 degrees

  2. Melt butter on stovetop or in microwave for 90 seconds on 50% power

  3. In a mixing bowl, place pancake mix, milk, melted butter and eggs. Beat mixture with electric beater 90 seconds. Scrape down sides and bottom of bowl, beat again for another 30 seconds

  4. Open Libby’s Pineapple Slices, drain, place slices on a plate and set aside

  5. When temperature on griddle is set, butter the surface

  6. Place Libby’s Pineapple Slice on griddle and pour 1⁄4 cup pancake mixture around the ring of the pineapple slice. Repeat this process as often as needed without overcrowding the griddle.

  7. Once pancake mixture bubbles up and the bottom edge of pancakes have become cooked, about 60 seconds, flip over to cook the other side, another 60 seconds.

  8. Repeat steps 6 and 7 until pineapple rings are gone

  9. Serve pancakes hot with your favorite syrup and bacon or sausage. Enjoy!
