Libby’s Pineapple Pumpkin Muffins


2 cups all purpose flour 1 tsp baking powder 1/2 tsp salt
2 tsp cinnamon

1 tsp ground ginger
2 cups Lakeshore Pumpkin
2/3 vegetable oil
3/4 cup brown sugar
1 tsp vanilla extract
2 eggs
1 cup Libby’s Pineapple Chunks, drained


Preheat oven to 350 degrees.
Grease 12 cup muffin tray and add paper cups.

Mix flour, baking soda, baking powder, salt, cinnamon and ginger

In a separate bowl, combine Lakeshore Pumpkin, oil, brown sugar, vanilla, Libby’s Pineapple and eggs.

Combine both mixtures into large bowl and whisk together. Evenly distribute mixture into muffin tray.

Bake for 20-25 minutes or until a toothpick inserted near the center of one muffin comes out clean.

Let cool for 10 minutes and Enjoy!
